Mini Meatloaves
Ingredients:
Cooking spray
1 cup chopped onion
1/2 cup chopped mushrooms
1 cup fresh spinach
1 Tbs dried parsley
2 tsp. dried oregano
1 Tbs Worcestershire sauce
1/2 tsp each of salt & pepper
1 Lb of ground meat (your choice!)
1 large egg
1/3 cup ketchup
1 tsp. hot sauce
Directions: Saute onions, mushrooms, and spinach until lightly browned and cooked through, about 5 minutes. Combine the next 8 ingredients (through the egg) in a large bowl. Spray a 12 cup muffin tin with cooking spray and put a half cup of the meatloaf mixture into each cup. Mix the ketchup and hot sauce and brush onto the mini loaves. Bake loaves for 30 minutes at 350 degrees. Cool & enjoy with some Heinz ketchup !
