Blueberry Oatmeal Bread

Blueberry Oatmeal BreadIngredients

2/3 cup packed brown sugar

3/4 cup soy milk

1/2 cup canola oil

2 eggs

2 & 1/4 cups flour (1 cup whole wheat, 1 & 1/4 cup white)

1 cup quick-cooking oats

3 teaspoons baking powder

1 teaspoon cinnamon

1/4 teaspoon salt

1 cup blueberries (either fresh or frozen & thawed!)

Directions:

Preheat oven to 350* and grease the bottom of a 8 or 9 inch loaf pan

In a large bowl, mix brown sugar, milk, oil, and eggs. Stir in the remaining ingredients except the blueberries.

Beat for 30 seconds and gently fold in blueberries. Pour into pan and sprinkle with additional oats.

Bake 45-55 minutes. Cool for 10 minutes and remove from pan. Cool on a wire rack for 2 hours before slicing.
